It's still nice knowing you can cut directly on your countertop, even if you rarely do it—unless your cutting board is dirty or you want to impress your guests.

After a while, you can switch to using it a few times per year after doing some light sanding to repair any scratches or other damage. You can clean wooden countertops with soap and water, but just be sure to dry them properly as sitting water can cause damage.
